
Chef Freddy Monteros is the founder and head chef of Erizo de Mar in Guadalajara. Originally from Ciudad Juárez, he studied hospitality at the prestigious Glion University in Switzerland. His love for food has taken him around the world, working in different countries to learn new techniques and refine his skills.
Throughout his career, Freddy has worked in top restaurants and hotels, including Grosvenor House Dubai and The Westin in Beijing, where he developed a passion for coastal cuisine and wine. He also trained at the three-Michelin-starred restaurant Quique Dacosta in Spain, where he learned the discipline and dedication needed to excel in fine dining.
At Erizo de Mar, Freddy creates a dining experience that blends nature, art, and technique. His menu focuses on fresh ingredients and dishes meant for sharing, making each meal a social and flavorful experience. Constantly evolving, his food reflects a commitment to quality and innovation, offering guests a journey through unique flavors.
