Floriano Pellegrino was born in Lecce in 1990 and grew up nearby. His love for food started at home, where his family had a farm. Helping with the family business gave him an early understanding of food and cooking. After studying hospitality, he traveled around Europe, working in top restaurants with famous chefs like Luis Andoni Aduriz, Eneko Atxa, Alexandre Gauthier, René Redzepi, Claude Bosi, and especially Martín Berasategui. This experience with Berasategui was very important for his development as a chef.

In 2015, Pellegrino and his partner, pastry chef Isabella Potì, opened Bros’ in Lecce. They quickly became known for their modern and new take on Mediterranean food. They focus on using great ingredients from the Salento region, but they also use cooking methods and ideas they learned from working in kitchens around the world. They want to create dishes that are not only delicious but also tell a story and make people think differently about food.

Pellegrino and Potì’s work at Bros’ has won many awards, including a Michelin star in 2018. They have also been featured in Forbes’ “30 Under 30” and have received awards from The Best Chef Awards and other groups. Their restaurant is known for its creative and sometimes bold dishes, which try to change how people think about traditional Italian cooking. They are dedicated to using local resources and creating a dining experience that is both special and connected to their region. They also started the Bros Rugby Club to help young people in their area through sports.
