Onion ramen, prepared in a style similar to traditional French onion soup.
Preparation
- Chop onions and sauté them with a bouquet garni.
- Toast flour and add it to the pan.
- Add water and simmer the mixture.
- Once cooked, transfer the mixture to a blender and blend until smooth.
- Spread the blended mixture onto a silicone mat and dry it in the oven.
- When dry, roll the mixture and cut it into ramen.
- Add thin calamari slices to the barbecue; as they cook, they will curl up.
- Place the ramen and curled calamari into a bowl.
- Add warm onion-calamari stock.
- Finish with a quail egg and spices.
