Onion Ramen with Calamari

Onion ramen, prepared in a style similar to traditional French onion soup.

Preparation

  1. Chop onions and sauté them with a bouquet garni.
  2. Toast flour and add it to the pan.
  3. Add water and simmer the mixture.
  4. Once cooked, transfer the mixture to a blender and blend until smooth.
  5. Spread the blended mixture onto a silicone mat and dry it in the oven.
  6. When dry, roll the mixture and cut it into ramen.
  7. Add thin calamari slices to the barbecue; as they cook, they will curl up.
  8. Place the ramen and curled calamari into a bowl.
  9. Add warm onion-calamari stock.
  10. Finish with a quail egg and spices.
