Preparation
- Peel the yuca and grate it into small pieces.
- Blend the grated yuca and mix it with corn flour.
- Knead the mixture into a smooth, uniform dough.
- Press a small piece of dough in a tortilla press to form a tortilla shape.
- Place cochinita pibil on top and cover it with another tortilla-shaped piece
- Use a mooncake mold press to shape it into its final form.
- Fry the shaped pieces until golden brown.
