Preparation

  1. Peel the yuca and grate it into small pieces.
  2. Blend the grated yuca and mix it with corn flour.
  3. Knead the mixture into a smooth, uniform dough.
  4. Press a small piece of dough in a tortilla press to form a tortilla shape.
  5. Place cochinita pibil on top and cover it with another tortilla-shaped piece
  6. Use a mooncake mold press to shape it into its final form.
  7. Fry the shaped pieces until golden brown.
