Perfectly ripe Oxheart tomato filled with Bonito tuna, shallots, mushrooms confit, chives and topped with kohlrabi.
Preparation:
- Chop the ingredients for the filling. Mix them.
- Slice an Ox heart tomato very thinly. You need a sharp knife.
- Fill the tomato slice and fold it like a gyoza.
- Serve cold with a cold tomato soup.
